INGREDIENTS:

  • 1 (15.25oz) box of red velvet cake mix
  • 3 large eggs (beaten)
  • 1 ¼ cups milk
  • ½ cup vegetable oil
  • 1 (8oz) package cream cheese (room temperature)
  • 1 cup powdered sugar
  • 1 tbsp pure vanilla extract

INSTRUCTIONS:

  1. Preheat oven to 325 degrees and grease a small bundt pan with cooking spray.
  2. Beat together the box ingredients with the eggs, milk and oil in a large bowl until combined.
  3. Pour the batter into the prepared bundt pan and bake according to the box instructions, about 30 minutes or until a toothpick inserted in the center comes out clean.
  4. Whisk together the cream cheese, powdered sugar and vanilla in a small bowl until smooth.
  5. Invert the cooled cake unto a serving dish and pour the cream cheese icing evenly over the top. Cut into slices and serve.
  6. TIP: Halfway, if the pound cake starts to brown too quickly, loosely tent with foil.
