Recipe – Beef and Broccoli Stir-Fry

Recipe by SavingDessert.com 

MAKES: 6 Servings
TOTAL TIME: 1 hr 25 min

INGREDIENTS:

MARINADE:
• 1 tsp cornstarch
• ¼ tsp baking soda
• 3 Tbsp soy sauce
• 1 tsp vegetable oil
• 1 lb flank steak

SAUCE:

• 3 Tbsp soy sauce
• 1/3 cup oyster sauce
• 1/3cup water
• 1 tsp sesame oil
• 2 Tbsp brown sugar
• 2 tsp cornstarch

STIR FRY:
• 3 tsp vegetable oil
• 3 small onions, cut into wedges
• 4 cups broccoli florets
• 1 medium carrot, peeled, cut into sticks
• 3 cloves garlic, minced
• 1 Tbsp fresh ginger
• ¼ tsp crushed red pepper flakes
• scallions, for garnish
• 1 Tbsp toasted sesame seeds, for garnish
• hot cooked rice

INSTRUCTIONS:

1. In a medium bowl combine marinade ingredients. Add the sliced steak. Toss, cover, set aside for 30 minutes.

2. Combine all the sauce ingredients, whisk until blended. Set aside.

3. Heat 1 tsp vegetable oil in a large skillet. Add half the beef, cook until browned and crisp on edges. Remove to a plate. Repeat.

4. Add 1 tsp of oil into empty pan. Add the onion, carrots, broccoli and stir fry for 4-5 minutes. Reduce heat to medium, add the garlic, ginger, red pepper flakes. Sauté, stirring constantly until the garlic is fragrant, about 1 minute.

5. Return beef to the skillet. Add sauce. Cook, stirring until the sauce thickens, about 5 minutes.

6. Remove from the heat and serve over hot cooked rice, garnish with sliced scallions and toasted sesame seeds.

‘Tis the Season

With the holiday season there are a lot of causes for celebration, family get-togethers, and joy. Yet, for some, this is a season of pain, regret, and reflection of the loss of loved ones or friends who are no longer with us.
When I was in the military, holiday seasons were always tough when you were deployed or when you were away from your loved ones. When we had time and while everyone in the military was in the same position, you developed a new family and created memories and shared meals with people you never would have “back home”.
The Bible says in Ecclesiastes 3:1-8…
“To everything there is a season, and atime to every purpose under the heaven;
A time to be born, and a time to die;
A time to plant, and a time to pluck up that which is planted;
A time to kill, and a time to heal;
A time to break down, and a time to build up;
A time to weep, and a time to laugh;
A time to mourn, and a time to dance;
A time to cast away stones, and a time to gather stones together;
A time to embrace, and a time to refrain from embracing;
A time to get, and a time to lose;
A time to keep, and a time to cast away;
A time to rend, and a time to sew;
A time to keep silence, and a time to speak;
A time to love, and a time to hate;
A time of war, and a time of peace.”

There is a season, time, and purpose for everything under heaven. This tells me, that each season we go through in life, shapes us for the next season and we build relationships during those times that last forever in our memories.
Many of my Army buddies survived and are doing well, yet there are a few who got injured, developed sicknesses due to exposure, and have mental trauma that they just cannot understand or process. Some have died and others have taken their own life, and that has a heavy toll on those who served and are left behind.
Holiday depression and stress can manifest into sadness, stress, fatigue, unrealistic expectations, financial stress, and the inability to be with one’s family and friends without feeling something or someone is missing. During the holidays and around strangers, parties, house guests, and family obligations, some feel overwhelmed and increased tension. Many military personnel, in my experience as a counselor and pastor, have symptoms of headaches, excessive drinking, overeating, and insomnia. If you need someone to talk to, pray with or just to listen to you, reach out to a Church or a Spiritual group. WE care and will always leave a light on for you!

Most importantly, GOD is up 24/7 and will always listen, love, and carry you through. One of my favorite verses in the entire Bible is when Jesus said in Matthew 11:28-30 “Come unto me, all ye that labor and are heavy laden, and I will give you rest. Take my yoke upon you, and learn of me; for I am meek and lowly in heart: and ye shall find rest unto your souls.”
Many of us CARRY heavy loads and feel worn out with all the “things” and memories we carry, yet God promises us “rest unto your souls” if you put your trust and faith in Him. If you feel led, repeat this short prayer after me: “Dear Lord, I am lost and feel overwhelmed with my hurt and pains of the past. I know I have messed up many things in my life, yet I believe in You, that You died for my sins, and can cleanse me from all my past hurts. I want to be better and need a personal relationship with You, thank You for dying for my sins and making me whole again. Thank You for being my friend and companion in this hurt-filled life. Help me find good people who love me, care for me, and will listen to my concerns. Gift Giving Made Special By Dee Jones

How much is too much? What if funds are low or altogether gone? Most children don’t really care about how the gifts get under the tree, that they are there.
I recall a special gift giving moment over twenty years ago. One Christmas morning, we were all around the tree and our first born was overwhelmed at the gifts he saw. Most of the gifts were for him as he was the only child at the time. In our home, we have a tradition of thanking God for our blessings and reading the Bible before opening presents. After the exchange of gifts, our son exclaimed, “I have more gifts than all of you”. That was the last year we allowed our giving to overshadow the gratitude of the season.
Now we are wiser, our giving is more creative, and we are learning to model gratitude for our special 6-year-old. His fourth year with us, we awakened to a living room full of opened presents and a huge smile! We laughed and took pictures as we rewrapped the gifts. As you think of fond memories of Christmas, remember that time spent with family and friends is precious.

Here are few suggestions on how to de-stress your holiday celebrations.
Advent calendars and devotionals are a wonderful way to center your thoughts on the blessing of Christmas. For those who are grieving the loss of a loved one, or who may not have pleasant memories of past holidays; start anew. Let God’s Word keep you and your family focused on the real reason for the holiday season.
Get creative! Homemade gift-giving has many benefits. They foster time together, are inexpensive, and are so much fun, and can even be tasty.
Family service is a great way to foster gratitude in our little ones. There are numerous ways to serve during the season and it can create fun memories and benefit your finances as well. Our church sponsors holiday meals and gift giving trees each year. Check with your local churches if you have a need or you want to serve.
Make a new memory. Attend a free Christmas play, a parade, or free musical event. Holiday movies have added a special feature. For example the movie “Journey to Bethlehem” offered free tickets to see the movie about Christ’s birth. Other faith-based movies are offering free tickets as well for those who want to attend. If you are able, you can donate to this cause as well.
Start your own special traditions. We love memorizing scripture each week leading to the story of Mary and Joseph. Little ones love time spent together. My son enjoys interaction more than reading a book, so we act out parts which bring the story alive.
No matter your economic status, time is golden. Spend it wisely and model gratitude and love this holiday season. It is blessed to give and it is also blessed to receive.

Ways To Activate Happy Hormones

Dopamine, Oxytocin, Serotonin, and Endorphins all help promote happiness and pleasure while reducing depression and anxiety. You can activate and give these feelgood hormones a natural boost with some simple activities.

First, lets go over.....UNDERSTANDING THE BASICS OF HAPPY HORMONES!

DOPAMINE. The ‘Reward Chemical’ for motivation and concentration is released by completing tasks, doing self-care activities, striving towards a goal. Associated withExhilaration, Bliss, Motivation, Concentration, Movement, and Learning.

OXYTOCIN. The ‘Love Chemical’ is released and increases trust/relationships by playing with a dog/cat, hugging a loved one, giving/receiving compliments. Associated with… Bonding, Arousal, Trust, Communication Skills, Anti-Stress, and Self-Esteem.

SEROTONIN. The ‘Calm Hormone’  for well-being and happiness. When released, it aids in improving social behavior. It’s released while doing yoga/meditating, running, sitting in nature, and being in the sun. Associated withMood, Appetite, Sleep, Memory, Sense of well-Being, and Social Behavior.

ENDORPHINS. The ‘Pain Killer’ relieves stress and blocks discomfort. It’s released when using essential oils, while watching a funny movie, eating, and exercising. Associated with... Relieving Stress, Feeling of Euphoria, Relieves Pain, and Pleasure.

We are complex human beings. Our mood and chemistry is influenced and impacted by multiple things. In between sensing a situation and reacting or responding to it, hormones help your brain understand, evaluate, and communicate what you’re experiencing. These hormones have a mission.

Each one Dopamine, Oxytocin, Serotonin, and Endorphins activate in a certain way, signaling certain emotions and stimulating certain areas of your brain. UNDERSTANDING THE BASICS OF HAPPY HORMONES should help with unique ways to activate your happy hormones!!

Designing The American Flag

Happy Veterans Day! Honor your vets this day by learning about the Designing The American Flag

The current design of the U.S. flag is its 27th; the design of the flag has been modified officially 26 times since 1777. The 48-star flag was in effect for 47 years until the 49-star version became official on July 4, 1959. The 50-star flag was ordered by then president Eisenhower on August 21, 1959, and was adopted in July 1960. It is the longest-used version of the U.S. flag and has been in use for over 63 years.

The First Flag

The first flag resembling the modern stars and stripes was an unofficial flag sometimes called the Grand Union Flag, or “the Continental Colors”.

It consisted of 13 red-and-white stripes, with the Union Jack in the upper left-hand-corner. It first appeared on December 3, 1775, when it flew aboard Captain Esek Hopkin’s flagship Alfred in the Delaware River. It remained the national flag until June 14, 1777. The “Grand Union Flag” has historically been referred to as the first national flag of the United States.

The Continental Navy raised the Colors as the ensign of the fledgling nation in the American War for Independence. The name “Grand Union” was first applied to the Continental Colors by George Henry Preble in his 1872 book known as History of the American Flag.

The flag closely resembles the flag of the British East India Company during earlier in that era. Sir Charles Fawcett argued in 1937 that the company flag inspired the design of the U.S. flag. Benjamin Franklin once gave a speech endorsing the adoption of the company’s flag by the United States.

This was a way of symbolizing American loyalty to the Crown as well as the United States’ aspirations to be self-governing, as was the East India Company. Some colonists also felt that the company could be a powerful ally in the American War of Independence, as they shared similar aims and  grievances  against  the  British government’s tax policies. The resemblance is obvious, and some of the Founding Fathers of the United States were aware of the East India Company’s activities and of their free administration of India under Company rule.

Flag Resolution of 1777…

On  June  14,  1777,  the  Second Continental Congress passed the Flag Resolution which stated: “Resolved,That the flag of the thirteen United States be thirteen stripes, alternate red and white; that the union be thirteen stars, white in a blue field, representing a new constellation.” Flag Day is now observed on June 14 of each year. Both the stripes (barry) and the stars (mullets)  have precedents  in  classical heraldry. Mullets were comparatively rare in early modern heraldry. A widely repeated theory is that the design was inspired by the coat of arms of George Washington’s family, which includes three red stars over two horizontal red bars on a white field. Despite the similar visual elements, there is “little evidence” or “no evidence  whatsoever”  to  support  the claimed connection with the flag design.

The first official U.S. flag flown during battle was on August 3, 1777, at Fort Schuyler during the Siege of Fort Stanwix... Massachusetts reinforcements brought news of the adoption by Congress of the official flag to Fort Schuyler. Soldiers cut up their shirts to make the white stripes; scarlet material to form the red was secured from red flannel petticoats of officers’ wives, while material for the blue union was secured from Capt. Abraham Swartwout’s blue cloth coat. The 1777 resolution was probably meant to define a naval ensign. In the late 18th century, the notion of a national flag did not yet exist or was only nascent. The flag resolution  appears  between other resolutions  from  the  Marine Committee.

The Flag Resolution did not specify any particular arrangement, number of points, nor orientation for the stars and the arrangement or whether the flag had to have seven red stripes and six white ones or vice versa. The appearance was up to the maker of the flag. One  arrangement  features  13  five pointed stars arranged in a circle, with the stars arranged pointing outwards from the circle (as opposed to up), the Betsy Ross flag. Experts have dated the earliest known example of this flag to be 1792 in a painting by John Trumbull.

Despite the 1777 resolution, the early years of American independence featured many  different  flags.  Most  were individually crafted rather than mass produced.  While  there  are  many examples of 13-star arrangements, some of those flags included blue stripes as well as red and white.

Benjamin Franklin and John Adams, in an October 3, 1778, letter to Ferdinand I of the Two Sicilies, described the American flag as consisting of “13 stripes, alternately red, white, and blue, a small square in the upper angle, next to the flagstaff, is a blue field, with 13 white stars, denoting a new Constellation”. John Paul Jones used a variety of 13-star flags on his U.S. Navy ships including the well-documented 1779 flags of the Serapis and the Alliance. They were two of the earliest known flags of 13 stars.

Constance Sims Rosser entered the United States Army in 1985. She was assigned to the US Army Medical Service Corps as a Nuclear Medical Science Officer and Preventive Medicine Officer.

She  served  overseas  and  at  various installations within the USA. She is a Command and General Staff College graduate. Her passion in retirement is to help her community; be a voice and advocate for others and focus on her physical, mental, emotional and spiritual wellness.

In addition to having a wonderful husband and two adult children, she is proud of her many accomplishments in the VA National Golden Age Games. In five years she has won four gold medals and two silver medals. Her medals were awarded in power- walking and recumbent bike cycling

“The Christian is an instrument played by the Holy Spirit. The aim of spiritual discipline is to keep this instrument in tune.”

– Thomas Merton When it comes to the topic of spirituality, most of us would agree that our spiritual lives leave something to be desired. We talk about wanting a more meaningful relationship with God, and we dream about things we could do to make that happen, but too often, that’s where it ends; we don’t carry through on our dreams.

A meaningful spiritual life takes work. That’s why we call those things we do to deepen our “spiritual disciplines.” We need to be intentional about making time and space for God in our lives – to create an environment that nurtures this relationship. If we follow Thomas Merton’s Analogy and we are able to see ourselves as instruments played by the Holy Spirit, then we must ask ourselves: Are our instruments in tune? What might we do to allow the Spirit to play us even more beautifully, in ways that truly honor God?

Are we actively striving to encounter God and mold our lives into the likeness of Jesus Christ? Or, have we put our instruments in the corner and allowed dust to collect on them? Is our faith just another component of our lives which competes with so many others and often gets short-changed? If this is the case, then I encourage you to make a commitment to refresh your spiritual life. Use the upcoming summer months to consider some new possibilities and commit yourself to start these disciplines in the fall.

There are many ways that you can do this. You can have a regular individual devotional and prayer time. You can come to one of the Christian Education Classes we offer at church and join your brothers and sisters in Christ as we learn more about God and yourselves, and encourage each other to grow spiritually. You can worship every week, = coming with an open mind and spirit to what God is Saying to you, through me or others leading the service (including the music). We can create Sabbath time in our lives when we do things to renew ourselves. Thomas Merton continues, “Spiritual disciplines are like the tightening of a violin string…what we must do is bring the stings of the delicate instrument, which is our whole being, to the exact pitch which the Holy Spirit desires of us, in order that the Spirit may produce in us the exquisite melody of divine love we were created to sign…”

Friends, is your instrument in tune? Remember, instruments don’t tune themselves. If yours needs a tuning, commit yourself to it, make a plan, and stick to it. And when the going gets tough and you’re tempted to give up, draw on the strength of your church family to encourage and support you. Perhaps you could join with another to hold each other accountable to faithful discipleship. That’s what the Body of Christ is supposed to do for one another. May it be so for you and for me that God might be pleased with us.
